Nut-Free Energy Bites

These nut-free energy bites are perfect to send in your kiddo's lunchbox! Or as a healthy snack for you!

Ingredients

  • ¾ cup quick oats
  • cup flax meal
  • ½ cup sunflower seed butter
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1 Tbsp chia seeds

Instructions

  • Combine all ingredients in a large bowl.
  • Select add-ins.
  • Stir to combine into a dough-like consistency.
  • Using a cookie scoop, roll into balls and place on a baking sheet in the refrigerator for 20 minutes.
  • Store in an air-tight container in the refrigerator (up to 2 weeks) or freezer (up to 3 months).

Notes

1/4 cup (total) of optional Add-ins:
  • Sunflower Seeds
  • Chia Seeds
  • Chocolate Chips
  • Raisins
  • Craisins
  • Shredded Coconut
And sprinkle a little Sea Salt to make them extra delicious!
