I love a good egg roll, but if I’m being totally honest, I will likely never make them at home. I know the basics, but it just seems too complicated for regular family dinner rotation. Well, that’s what I thought until I stumbled upon this recipe for an egg roll in a bowl and I realized it was the genius solution to all my problems.
It is in fact the perfectly quick meal when you’re craving a delicious egg roll but are keeping it fast and light in the kitchen. If you use pre-shredded cabbage and carrots, this recipe can be on the table in 10-15 minutes! Not only that, but it is a low-carb alternative to the real thing.
I have always loved the concept of turning a classic favorite into a “bowl” meal. Some of my all-time faves are the banh mi bowl, the burrito bowl, sushi bowl, etc. I think it’s because you can perfectly craft each bite with all of the ingredients. YUM!
This has me thinking…what else could I turn into a “bowl” meal? What am I missing? Let me know because I’d love to give it a try!
