When we had this chopped beef over the holidays, I absolutely begged for the recipe. Imagine my surprise, when the recipe for the BEST chopped beef I’ve ever had was only three (3!!) ingredients. Trust me, I was skeptical. I was so shocked when it turned out as delicious as I remembered — and just as easy as it sounds.
I think the key to this (and most other slow cooker meals) is in searing the meat before adding it to the crockpot. By doing so, you are trapping in all of the meaty goodness, which makes the beef insanely tender.
I love this slow cooker I got as a wedding gift because you can use it on the stove top for searing, then plop it in the slow cooker for the rest (aka — no extra dishes). If you have a birthday coming up, put this on your list. It’s pricey, but the convenience of doing it all in one pot is so worth it in my book. Did I mention it can go in the oven, too? It’s going to be your new best friend.
After searing the roast, all you do is dump the ingredients in the slow cooker and pat yourself on the back for being so smart and efficient. Once the slow cooker has done its thing and the beef is tender, you can shred with a fork and serve it like that, or chop it into small, bite-sized portions (I chose this way). I served mine on a slider, but I think this would be great in tacos or even as a standalone main dish.
