During these brutally cold winter nights (surely it’s almost over?), I can’t help but dream of cozy cocktails to keep me extra warm. My go to winter drink is the tried-and-true Irish Coffee. I mean, it has everything I love: coffee and booze!
The key to the very, very best Irish coffee is brown sugar simple syrup. I always knew simple syrup was, obviously, “simple” to make, but it wasn’t until I saw how expensive it is to buy that I truly became motivated to make my own. Spend more than $5 for sugar and water?! Yeah, that’s not going to happen.
I have always used a standard white sugar when making simple syrup, and I’m so mad I didn’t know about this secret ingredient sooner. Brown sugar simple syrup is absolutely perfect for this toasty drink! The flavor of the simple syrup is much richer than its boring refined counterpart, and it sweetens up the whiskey just enough.
How To Make Brown Butter Simple Syrup
Ingredients:
• brown sugar
• water
Directions:
Heat until sugar dissolves into the water.
I told you it was easy!
Topping off your drink with a healthy dollop of whipped cream is not necessary, however, I strongly encourage you to live your best life and have the whipped cream. If you don’t keep whipping cream on hand (who does??), I would definitely recommend Trader Joe’s Shelf Stable Whipping Cream. Keep a box or two on hand for when you desperately need whipped cream, for example, when you make yourself a much-needed Irish Coffee.

Ingredients
- 1 1/2 oz Irish whiskey Jameson
- 1 oz brown sugar syrup
- 4 oz coffee
- unsweetened whipped cream
Instructions
- Combine whiskey, coffee and syrup in a mug or Irish coffee glass. Top with whipped cream.
