My kids (and my husband!) have been going nuts for these ham and cheese mini quiches! They are easy to make and just as easy to freeze, so I like to make several batches at once and stock up.
I grew up with my mom making big batches of delicious food to take to her friends and co-workers. She worked with mostly men, so she always chose to bring good, hearty food. I remember her making these mini quiches with ham, sausage or bacon — whatever we had on hand. They must’ve been popular because she made them the most!
Fifteen years later, I found myself making them for my friends at work, and they always asked for more, too. I can say with certainty that everyone loves them! Feeding people is kind of my “thing,” so I enjoyed making breakfast for my team as often as I could.
Once I had kids, all my energy has gone into feeding them. Isn’t it amazing how much those little ones can eat? I’m in awe daily. And exhausted! Thank goodness my kids just love these little bite-sized ham and cheese mini quiches! The size is perfect for their tiny little hands. Plus, they’re filled with two of my kids’ faves: ham and cheese! Ham and Cheese Mini Quiches
Ham & Cheese Mini-Quiche
Ingredients
- 6 eggs whisked
- 2 Tbsp milk
- 1 cup cheddar shredded
- 1/3 cup ham diced
- salt & pepper to taste
Instructions
- Whisk eggs & milk together. Season with salt & pepper.
- Pour into the mini-muffin tin, filling only half of each.
- Drop in chopped ham and top with shredded cheese.
- Bake at 350F for 10-12 minutes.
