I am not shy about my deep love for Chrissy Teigen and her recipes, so it will not shock you that I really, really love the Sweet and Salty Coconut Rice from her first cookbook. I sometimes try to eat healthy, so I wondered if this delicious concoction would work with cauliflower rice. And since I’ve gone to all the trouble to blog about it, you can probably guess it totally worked!!
This makes the perfect side dish, but also I ate it as my main dish with roasted veggies and it absolutely hit the spot. It’s so good, you’ll feel like you found a healthy-food loophole.
I was going to try to make this dish without the sugar, and it while it was good without it, the sugar gives it a little something extra so I recommend adding just a little if possible.
Sometimes cauliflower rice gets a bad rap, but I truly don’t mind it. For some reason — unlike other healthy alternatives — my brain really doesn’t mind this swap. Now, if someone could make a cauliflower bread that was this good…
Sweet and Salty Coconut Rice Recipe
Cauliflower Sweet & Salty Coconut Rice
Ingredients
- 1/4 c. shredded unsweetened coconut flakes
- 1 Tbsp coconut oil
- 3 cups cauliflower rice
- 1 cup coconut milk
- 1/2 tsp salt
- 1/2 to 1 tsp coconut sugar optional
Instructions
- In a dry skillet, toast the coconut flakes over medium heat, stirring constantly until browned. Remove from skillet and set aside.
- In the same skillet, add coconut oil and heat until melted. Add cauliflower rice and stir to coat. Cook, stirring occassionally, for 5 minutes until fragrant. Add in the coconut milk, salt & sugar, and reduce heat to medium-low. Simmer for 10-12 minutes. Remove from heat and top with toasted coconut for serving.
