My kid’s school this year is nut-free so his go-to lunch of peanut butter & jelly sandwiches is a no go this year. I wanted to make something nut-free that would be easy to grab and put in his lunchbox so I didn’t have to spend a ton of time in the mornings. Enter: These Easy & Delicious No-Bake Nut-Free Energy Bites!
Nut Free Alternatives
First of all, I tested a few nut free energy bite recipes that are out there because I really never want to reinvent the wheel. The key ingredient in all that I tested is sunflower seed butter, or sunbutter. I used the Trader Joe’s version, but there are several available options at most grocery stores.
Or if you don’t have access to sunflower seed butter… or if you’re the DIY type, you can always make your own.
Find a simple how-to here at the Eating Bird Food blog.
Make the Energy Bites
The base of the energy bites is super simple and easy to whip up in about 5 minutes. All you’ll need is:
- Quick Oats
- Flax Meal
- Sunflower Seed Butter
- Maple Syrup
- Vanilla (optional)
Delicious Add-Ins
Once you have your base, choose your add-ins. You can choose one or two or go crazy with it. For my first batch, I made them with chocolate chips & sea salt – a combo that can’t go wrong.
- Sunflower Seeds
- Chia Seeds
- Chocolate Chips
- Raisins
- Craisins
- Shredded Coconut
- Sea Salt
Store the Energy Bites
These energy bites can be stored in an air-tight container in the refrigerator for up to 2 weeks (if they last that long)! If you make a huge batch, it’s super easy to store them in the freezer (up to 3 months) and pop them in your lunchbox in the AM so they’ll be perfect and ready to eat by lunch time.
And added bonus… they can even be kept at room temperature for a few days!
